Compostable Tray Drop-Off – Seasonal Lunch Spread

For this seasonal drop-off event, I built a complete lunch spread designed for easy service, clean presentation, and maximum flavor; all packed in compostable trays. The goal was to create an elevated, from-scratch menu that traveled well, set up quickly, and still felt abundant and chef-crafted the moment the lids came off.
The delivery included a full cheese and accompaniments box with a variety of soft-ripened cheeses, honeycomb, roasted nuts, and fruit spreads. A warm roasted vegetable tray featured a mix of Brussels sprouts, sweet potatoes, purple potatoes, onions, and toasted grains tossed in herb vinaigrette. A bright seasonal salad followed, layered with arugula, mixed greens, autumn squash, apples, cherry tomatoes, pomegranate seeds, and shaved onion, served with a house poppyseed dressing.
A menu for the kiddos includes grilled cheese sandwiches, peanut butter and Nutella sandwiches with jams and fresh cut fruit cups.
For heartier options, I prepared croissant sandwiches filled with chicken salad, crisp lettuce, and fresh herbs; a pasta salad with vegetables and vinaigrette; and a separate seafood salad packed with shrimp, celery, and chives. I also provided smoked brisket sandwiches built on brioche rolls with onions and pickled shallots for a richer, warm option. To top it off, a full ice cream and topping bar arranged in compostable cups.
Everything was prepared fresh and boxed the morning of the event, then delivered and set out so guests could serve themselves immediately. This drop-off showcased how compostable packaging can still feel polished and generous when the food inside is made with intention — a full, varied spread designed to feed a crowd without sacrificing quality
